2019 SPARKLING CABERNET SAUVIGNON

This wine shows some classic Cabernet varietal character. Aromas of black currant, fig, and plum open into a background of toasted bread and dried herbs. The fine mousse on the palate highlights fig and herbal notes with some nice oak spice, followed by a long and powerful finish.

Napa is known for producing excellent Cabernet Sauvignon. We’d always wondered what it would taste like as a sparkling wine. We’re excited to share this second release from 2019. Grapes were hand-picked and gently pressed away from the skins to produce this Blanc de Noirs style. A portion of the blend was aged in older oak barrels, lending some subtle spice and rounding out the mouthfeel. We hope you enjoy this unique release as much as we do!

This wine will do well paired with stronger flavors. It would be lovely with roasted pork and figs or paired with a savory wild mushroom bread pudding.
