About This Wine
After blending the DVX each year, we set aside part of the blend and add a small amount of red Pinot Noir to give the wine it’s beautiful rose color. A shorter aging time on the yeast as compared to DVX allows the red fruit flavors to express themselves in balance with the toasty, yeast notes. 2017 was a warmer vintage, allowing for development of beautiful, ripe flavors in the grapes. Twenty-two percent of the DVX blend fermented in older oak barrels, lending a nice spice note to this wine, along with mid-palate weight. The small addition of red wine to the blend shifted the personality of the wine in favor of Pinot Noir, but without sacrificing the elegance of the Chardonnay.

Profile
This wine greets with aromas of yellow peaches, strawberries and cream, juicy orange, and pleasant, toasty notes. The toastiness is evident on the attack and leads to notes of cherry, orange, stone fruit, and strawberry jam. This is a well structured wine that should age well.
Occasions & Pairings
This wine would be lovely paired with a holiday brunch or a creamy smoked salmon spread on toasted bread.
