About This Wine
Blanc de Blancs translates to “white of whites,” meaning we use only white grapes to make this wine. We picked the grapes for this Blanc de Blancs by hand during the cool morning hours to ensure they arrived at the winery in pristine condition. Individual vineyard lots were fermented separately at cool temperatures in stainless steel tanks to preserve freshness and fruit intensity. 2018 was a year of exceptional quality, so we made a special, second Blanc de Blancs blend that year and decided to age it longer, just shy of 5 years. As we tasted the wine during aging, we realized it had the potential to be an Extra Brut. We’re proud to release this beautiful expression of Chardonnay in all its crisp elegance.

Profile
Aromas of Meyer lemon curd, tangerine, and green apple lead into notes of toasty biscuit and freshly baked brioche. The refined mousse highlights tangerine and apple, along with lovely brioche tones from so much time aging on the yeast. This is an elegant wine with balanced acidity and nice mid-palate weight leading into a long, delicate finish.
Occasions & Pairings
This wine wants to be paired with citrus or seafood – or both! Oysters immediately come to mind, but so do Spaghetti al Limone and linguine and clams. A beet and citrus salad with goat cheese would also work well.
