About This Wine
Blanc de Blancs translates to “white of whites,” meaning we use only white grapes to make this wine. In the case of the 2015 vintage, we made a blend of 91% Chardonnay and 9% Pinot Gris. We picked the grapes for this Blanc de Blancs Reserve by hand during the cool morning hours to ensure they arrived at the winery in pristine condition. Individual vineyard lots were fermented separately at cool temperatures in stainless steel tanks to preserve freshness and fruit intensity. 2015 was our earliest harvest for Mumm Napa, and the grapes showed beautifully concentrated flavors. We decided to bottle some of the blend in magnums to highlight that concentration. A little more than eight years aging en tirage, more than twice as long as the original 750ml release, brings a wonderful complexity to the wine, and the small dosage added after disgorging balances the wine’s bright acidity.

This wine opens with rich and toasty grilled bread notes complemented by Meyer lemon and Pippin apples. A frothy mousse highlights the bright acidity. Toasted bread characters and a creamy mid-palate lead into a long, citrusy finish.
Occasions & Pairings
The bright, beautiful acidity in this wine screams for briny oysters, but it would work well with a lot of dishes, from fried chicken to spaghetti al limone.
