About This Wine
On August 21st, 2017, we were treated to a very special solar eclipse, right in the middle of harvest. I remember well all the excitement leading up to that day, and how we stopped all the activity so that any employee who wanted to see the special phenomenon could come to the press pad to view it together. We were harvesting Pinot Noir that day, from both Oak Knoll and Carneros, and it made us think about how the moon covering the sun and turning it dark was the opposite of what we were trying to do with the fruit, making a white wine from red grapes. In honor of that special day, we made a Blanc de Noirs blend. Much of the blend is from vineyards harvested the day of the Eclipse itself. Profile
This wine has a lovely, pale copper color. Aromas of juicy orange, strawberry, nectarine, and yellow plum complement the toasty biscuit notes coming from 4 and a half years on the yeast. The wine opens with a burst of red apple followed by gilled bread and toasty yeast flavors. A fine and persistent mousse and bright acid profile play into a powerful structure typical of Pinot Noir. The long finish carries into notes of strawberry and dried peaches.
Occasions & Pairings
The structure of this wine calls for something rich and creamy to balance it. It’s excellent paired with a triple crème cheese to start a meal, but would also be delicious with a creamy shrimp fettucine alfredo.
