About This Wine

After blending the DVX each year, we set aside part of the blend and add a small amount of red Pinot Noir to give the wine its beautiful rose color.  A shorter aging time on the yeast as compared to DVX allows the red fruit flavors to express themselves in balance with the toasty, yeast notes. 2019 was a lovely vintage that resulted in balanced wines with excellent fruit expression. The small addition of red wine to the blend shifted the personality of the wine in favor of Pinot Noir, but without sacrificing the elegance of the Chardonnay.

Profile

The beautiful, pale pink color of this wine invites you in to aromas of peach, cherry, mandarin, and toasty biscuit.  The palate greets you with a pleasant mousse and creamy mid-palate with notes of peach, red apple, and raspberry.  The long, elegant finish closes with a lovely toastiness reflective of nearly 5 years on the yeast.

Occasions & Pairings

This is the perfect wine to pour for an intimate dinner party with friends.  I love it paired with salmon mousse and thoughtful conversations.
