Only 7 lots of Chardonnay and Pinot Noir were selected for the final 2007 DVX blend. Twenty-one percent of the wine volume was barrel fermented and aged to add depth and spiciness. Ten percent of the blend completed Malolactic fermentation for a round and creamy mid-palate structure. The blend was aged on the yeasts six years in the bottle, adding creaminess and soft notes and flavors. The wine was disgorged as a brut style and aged another six months on the cork before release. The rich and complex aromas are accentuated by the natural ripeness of our grapes with hints of red apple, wild strawberries, golden apple and apricot, as well as spicy tones of roasted nuts, white chocolate and honeysuckle. On the palate, it is an explosion of berry flavors, with layers of fresh fig, cherry and vanilla beans, underlined by a refreshing acidity. The lasting finish is dominated by biscuit, toast and nutty flavors.
