Brut Reserve Rosé Extended Tirage
Each year, we create our Brut Reserve Rose by adding a little bit of red Pinot Noir to the Brut Reserve blend, resulting in a beautiful pink color and a nice pop of red fruit. For this special Extended Tirage release, we held back a batch of Brut Reserve Rose, allowing it to age on the yeast for five years instead of the usual three. This additional aging contributed lots of rich, toasty aromas and flavors to the wine and also lent an extra layer of creaminess to the mid-palate.
Overview
This wine leads with aromas of toasted bread and roasted almonds, complemented by bright cherry, raspberry, peach, red apple, and orange marmalade. Notes of dried fig and oak spice in the background blend well with these brighter fruit aromas. On the palate, the soft mousse leads into a creamy mid-palate. Flavors of cherry, strawberry, peach, and citrus zest lead into a finish of toasted brioche.

The toastiness of this wine would work really well with anything grilled. Cedar plank salmon comes to mind immediately, but grilled chicken or pork would also pair nicely, as would vegetable skewers. If you want something a little more elegant, seared duck breast would be delicious.
