This bright and beautiful wine opens with aromas of green apple, citrus, brioche, and the slightest hint of marzipan. On the palate, it has a frothy mousse and a nice balance between creaminess and vibrant acidity. Citrus and toasty notes lead into a long and elegant finish. It’s a Blanc de Blancs in the classic Mumm Napa style, and a beautiful example of the Chardonnay personality. In comparison to the 2018 Blanc de Noirs, this wine shows the elegance, acidity, and length that Chardonnay contributes to a blend.
Blanc de Blancs translates to “white of whites,” meaning we use only white grapes to make this wine. In the case of the 2018 vintage, we made a blend of 100% Chardonnay. We picked the grapes for this Blanc de Blancs Reserve by hand during the cool morning hours to ensure they arrived at the winery in pristine condition. Individual vineyard lots were fermented separately at cool temperatures in stainless steel tanks to preserve freshness and fruit intensity. Five percent of this 2018 blend aged in oak, lending just a hint of spice to the wine. More than three years aging en tirage brings a wonderful complexity to the wine, and the small dosage added after disgorging balances the wine’s bright acidity.
As always, oysters are a magical pairing with Blanc de Blancs, but it would pair beautifully with a bowl of linguine and clams or seared scallops as well. If you want something simple, fresh chevre spread on a toasted baguette is a nice complement to this wine.
