This wine has a round and creamy nose with notes of spiced lemon bread, golden apples, apricot, and dried orange peel, with hints of toasted almond and vanilla. On the palate, the creaminess is balanced by fresh acidity. Flavors of apple, white plum, and a hint of vanilla lead into citrusy and toasty finish, with a lasting impression of lemon, orange, and toasted pastry.
Blanc de Blancs translates to “white of whites,” meaning we use only white grapes to make this wine. In the case of the 2016 vintage, we made a blend of 100% Chardonnay. We picked the grapes for this Blanc de Blancs Reserve by hand during the cool morning hours to ensure they arrived at the winery in pristine condition. Individual vineyard lots were fermented separately at cool temperatures in stainless steel tanks to preserve freshness and fruit intensity. Five percent of this 2016 blend aged in oak, lending a nice spice element to the wine. Four years aging en tirage brings a wonderful complexity to the wine, and the small dosage added after disgorging balances the wine’s bright acidity.
This wine would be lovely paired with chicken piccata or spaghetti al limone.
