Structured and Elegant
2015 Blanc de Noirs
Our 2015 Blanc de Noirs, which means “white of blacks” in French, is made of 100% Pinot Noir.
The pale, coppery hue of this wine gives away its Pinot noir roots, and so does the red fruit on the nose. Aromas of cherry, strawberry, apple, and peach are complemented by yeasty pie crust and almond notes. The palate is balanced, with great weight and structure, and a delicate mousse that carries into a long, juicy finish with plums, creamy citrus, and cherry flavors.
Blanc de Noirs means “white from blacks,” which aptly describes this white sparkling wine made from the red Pinot Noir grape. If you have ever cut into a red grape, you’ve probably noticed that in most cases, the inside of the grape is white. Such is the case with Pinot Noir. The color in a red Pinot Noir wine is extracted from the skins. In order to make this Blanc de Noirs, we instead send the grapes directly into the presses and gently press the juice away from the skins, trying to minimize any color pick-up in the process. The juice is then fermented in stainless steel tanks at cool temperatures to maintain the bright fruit characters of the grapes. When the wines are finished, the winemaking team carefully selects the best lots of Pinot Noir to create the Blanc de Noirs blend.
You know how good that turkey sandwich tastes the day after Thanksgiving? The only thing to make it better would be this wine. Just don’t forget the cranberry sauce.
