In 1847, along the banks of Jacob’s Creek in Australia's Barossa wine region, Johann Gramp planted his first vineyard. His vision was to create great tasting wines that reflect the true character of the grapes and the land. To this day we live and breathe this vision by producing wines that showcase how each grape variety expresses itself when shaped by the soil and the sun of Australia. For our Double Barrel wines, our winemakers first crafted beautifully rich red wines from superior quality grapes and matured them in traditional wine barrels. Then, using our unique Double Barrel technique, they finished them in aged whiskey barrels to build additional layers of complexity and an incredibly smooth finish.Download Fact Sheet
This Double Barrel Cabernet Sauvignon combines innovation with traditional winemaking expertise. First our winemakers carefully selected premium fruit that was ripe and muscular with pronounced tannins that would allow additional aging in whiskey barrels without compromising style or quality. After harvest, the fruit was gently crushed and de-stemmed into a range of static fermenters. Temperatures were carefully controlled during fermentation to ensure optimal color, tannin and flavor extraction from the skins. The wine was then matured in traditional wine barrels - a mix of new and used French and American oak hogsheads - for 12-18 months before each barrel was tasted. Only the best barrels were selected for blending. The entire blend was then finished in old American white oak barrels that had previously matured Irish whiskey. Irish whiskey barrels were chosen, after detailed trials, because our winemakers felt they best suited the elegance of Cabernet Sauvignon. Whiskey barrels differ from wine barrels. They are kiln-dried rather than seasoned; scorched at higher heats; and have narrower staves and thus more joins, which allows greater oxygen exchange. This softens the tannins in the wine and, most noticeably, adds fullness and real richness throughout the palate. The influence is subtle but discernible, and we call this unique process our “Double Barrel” technique.
