The 2013 Pinot Noir is a deep and brilliant red-rubies colored wine that exhibits wild red and black berry flavors with a hint of clove spice and toasted oak.
Our 2013 Napa Valley Pinot Noir still wine comes from the Devaux Vineyard in Carneros and is made in a limited quantity.
The Pinot Noir grape is a primary varietal for our sparkling wines, so it’s a natural transition for us to use it for a still wine as well. Our winemaker, Ludovic Dervin, has a special affinity for the grape, having spent time making Pinot Noir before coming to Mumm Napa.
The plots of vines selected for this project were located on very well-drained soils with shallow topsoil from our estate vineyard, Devaux Ranch. The grapes were harvested by hand in order to preserve the integrity of the berries. The fruit was picked early in the morning and delivered cold to our facility. Heat and bruising of the fruit isn’t appropriate to the crafting of top quality Pinot noir, since it enhances browning and oxidation of the juice, leading to “cooked flavors”, color loss and unbalanced structure.
As soon as the cold whole-cluster grapes are delivered, they are gently destemmed without crushing in order to keep a high rate of whole berries inside the fermentation tank. The berries are then kept at a temperature of 45F to 50F for up to 5 days prior starting alcoholic fermentation.
The wine is separated from the skins towards the end of fermentation, and the clear juice is then racked into French oak barrels to finish fermentation and slowly mature over a period of 10 months. The wine is racked and lightly filtered just before bottling.
This wine is a great companion to any dinner party or a relaxing night at home. Pair it with poultry or rice dishes and enjoy!
