2012 DVX Rosé
Exceptionally elegant, our 2012 DVX Rosé exhibits complexity and depth of flavors from aging on lees.
In appearance, the wine has a brilliant pink pomelo color, with a mesmerizing stream of tiny bubbles rising to a persistent crown of white mousse. The rich and complex aromas are accentuated by the natural ripeness of our grapes with hints of red apple, wild strawberries, cranberry, dried apricot, orange blossoms.
On the palate, it is an explosion of white and red berry flavors, with creamy layers of fresh fig, black cherry, vanilla beans, underlined by a crisp and refreshing acidity. The long-lasting finish is dominated by biscuit, toast and nutty flavors.
Every Vintage, the grapes we harvest for the DVX blend come from our very best vineyard locations. The grapes are harvested exclusively by hand during the cool morning hours to preserve finesse and elegance of the fruit flavors. Gentle handling of the whole clusters all the way to the presses ensures a delicate extraction of the purest juice fractions to handcraft this exclusive sparkling wine. The fruit was slowly de-juiced at low pressure with four press fractions kept separate. Only the middle fractions with the best acidity-sweetness-flavors balance are used to craft DVX wines. Low temperature primary fermentation – mostly in stainless steel tanks – enhanced fruit tones and preserved freshness. Individual lots were kept separate during initial fermentation to fully express the vineyards’ individual strengths and subtleties. Every year, DVX Rosé starts as a base wine blend of 50% chardonnay and 50% Pinot Noir. Only ten lots of Chardonnay and Pinot Noir were selected for the final 2012 DVX Rosé blend. We then add a small percentage of red Pinot Noir still wine to create the beautiful light pink Pomelo color and accentuate the wild red berry flavors. 33% of that base wine volume was fermented and aged with French Oak to add depth and complexity to the blend, before going to bottle for secondary fermentation. After tirage bottling and secondary fermentation inside the bottle, the wine was aged in bottle on the fermentation lees for 42 months, which fosters additional complexity with extra layers of creaminess, yeasty and biscuit flavors. The wine was disgorged as a brut style and aged another six months on the cork before release.
Perfect on its own as an evening starter, it will also be a perfect match a wide selection of foods, from sushi, salmon tartare, to roasted duck or even chocolate desert. Overall it balances complexity, richness and power with an elegant finesse in the signature DVX style. While enjoyable now, the 2012 DVX Rosé will continue to age for another 10 years.
