The grapes for this 2007 vintage came exclusively from our Devaux Ranch in the cool, breezy Carneros district of southern Napa Valley, a region long celebrated for its world-class sparkling wines. This vintage-dated vineyard designate sparkling perfectly marries fresh, bright citrus fruit aromas and flavors with a luxurious creamy/toasty tone.
We pick our Devaux Ranch grapes by hand at night or during the cool morning hours to ensure they arrive at the winery in pristine condition. These are kept separate and fermented at cool temperatures in small stainless steel tanks to preserve freshness and fruit intensity. A few selected lots are aged in French oak barrels to add depth, complexity and spiciness to the final blend. Our 2007 Devaux Ranch spent 48 months en tirage, which fostered its wonderful complexity and rich, creamy character. After disgorging, a small dosage was added back to balance the wine’s acidity with about 1% residual sugar.
The 2007 Devaux Ranch displays a fine, persistent bead and creamy, citrusy aromas of Meyer lemon and lemon custard, complemented by notes of honeysuckle, yeast and light toast. Its creamy citrus, golden apple and baked bread flavors are deep and mouthfilling while retaining the crisp elegance that is Mumm Napa’s trademark style.
