Extra Brut - a dryer style of sparkling wine than the common Brut style, Extra Brut uses a low dosage or less than 6 grams of residual sugar. Honoring the visionary work of our founder winemaker Guy Devaux, the 2006 DVX Vintage was blended without any Malolactic fermentation to retain its natural acidity and give the wine a maximum of aging potential. A small portion was allowed to age an extra 8 years in the bottle.
An “extra brut” style wine is very rare and difficult to produce. The style “extra brut” is dryer than the common brut style and uses a very low dosage with less than 6 grams of residual sugar.
The rich and complex aromas are accentuated by the natural ripeness of our grapes with hints of golden apple, wild strawberries, dried apricot, orange blossoms, as well as spicy tones of roasted nuts and honeysuckle. On the palate, it is an explosion of white and red berry flavors, with creamy layers of dry fig, honey, vanilla beans, lemon curd and peach cobbler underlined by a sharp and refreshing acidity. Crafted by a careful selection among more than 45 separate vineyards and different wine lots, only 8 small lots of Chardonnay and Pinot Noir met the high quality standards of DVX in 2006. These selected lots were kept separate during initial fermentation in order to highlight their vineyard differences and make the most of their specific strengths, for a final blend of power, finesse and harmony. The 2006 Vintage was blended without any Malolactic fermentation to retain its natural acidity and give the wine a maximum of aging potential. A small portion of the DVX wine produced with the 2006 Vintage was allowed to age up to 8 years in the bottle before disgorging. The extra aging time on the yeast developed an incredible new layer of flavors and soften the wine so well that we decided to disgorge it as a late release “extra-brut” style, with a very small amount of dosage added.Download Fact Sheet
The 2006 Extra Brut was made with a very limited production, only 800 cases were produced making a very special wine that perfectly pairs with any special occasion.
